Yes. Each lot records its gross weight, its melt weight and the refinery's final figures, so the difference is visible lot by lot.
Will it work for a pawn shop?
For the gold-buying side, yes: buying at the live price, lots and refinery settlements. It doesn't manage pawn loans.
